What could be more fun than a funfetti chocolate-chip ice-cream sandwich? The answer is absolutely nothing!  This lightened up, wholegrain sugar cookie is loaded with colorful sprinkles and mini chocolate chips and held together with creamy vanilla bean frozen yogurt. It basically screams SUMMER FUN!!!!!!

Easy to prepare ahead of time and perfect for a BBQ or hot summer’s day treat. It would take some serious will power to turn this cold and colorful dessert down but thankfully at 170 calories a sandwich, you don’t have to!! This little beauty is sure to be a hit with kids and adults alike!

Healthy Funfetti Ice-Cream Sandwiches

  • Yield: 16 sandwiches
  • Prep Time: 20 minutes
  • Cook Time: 8 minutes


  • 3/4 cup white whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 6 tablespoons salted butter (softened)
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 1/2 teaspoon vanilla extract
  • 1 tablespoon unsweetened applesauce
  • 1/4 cup semi-sweet mini chocolate chips
  • 1/4 cup sprinkles
  • 2 cups of your favorite frozen yogurt.*


  1. Preheat oven 350F

  2. In a small mixing bowl combine flours, baking powder, and baking soda. Set aside.

  3. In a medium mixing bowl, beat the butter and sugar until creamy.

  4. Add the egg, vanilla, and applesauce and beat well.

  5. Gradually add the flour mixture and continue to beat until fully combined.

  6. Stir in the sprinkles and chocolate chips.

  7. Using about 1/2 tablespoon of dough, roll into balls and place 1 inch apart on a greased cookie sheet.

  8. Bake for 8 minutes then remove from oven and allow to cool on the cookie sheet. The cookies will continue to bake slightly during this process.

  9. Once cookies are completely cool, carefully spread 2 tablespoons of your favorite frozen yogurt ice-cream onto the bottom of a cookie and then sandwich it with another. Gently spread the ice-cream along the sides until even.

  10. Wrap in plastic wrap (if not eating right away) and store in freezer until ready to serve.


*I used low fat vanilla bean frozen yogurt. Nutrition is calculated assuming 1/2 cup=110 calories
