I am such a huge fan of  sweet potatoes and asparagus. Loaded with vitamin A, C, K,  fiber, folate and numerous other benefits, what a fabulous way to start your day! Plus, don’t you just love all the vibrant colors?

I used half egg whites and only 1/4 cup of cheese to lower the fat in these breakfast beauties. I promise, you won’t even miss it with all the flavor happening. Originally I didn’t use bacon and I thought that they were fabulous HOWEVER I do think that the addition of bacon would be amazing and provided the nutritional info for that option as well. An easy breakfast or lunch on the go, these omelet muffins are a delicious and diet friendly addition to your day.

Low Fat Omelette Muffins

  • Yield: 12 muffins
  • Prep Time: 20 minutes
  • Cook Time: 21 minutes

Ingredients

  • 1 medium sweet potato, diced
  • 1/2 small red onion, diced
  • 1 teaspoon olive oil
  • 1 teaspoon coarsley ground garlic salt
  • 2 teaspoon garlic, minced
  • 1 cup asparagus, chopped
  • 6 large eggs
  • 6 large egg whites
  • 1 teaspoon coarsley ground garlic salt
  • 1/4 teaspoon freshly cracked pepper
  • 1 teaspoon dried parsley
  • 1/4 cup 2% milk
  • 1/2 cup shredded parmesan, divided
  • optional: 3 tablespoons bacon pieces

Instructions

  1. Preheat oven to 350F

  2. On a medium to medium/low heat, begin sautéing diced potato, onion, oil, and seasonings until the potatoes are just beginning to soften.

  3. Stir in chopped asparagus and remove from heat.

  4. As vegetables cool, whisk eggs, egg whites, seasonings, and milk until well beaten.

  5. Stir in 1/4 cup parmesan and vegetables.

  6. Divide among a well greased muffin pan.

  7. Sprinkle remaining parmesan on top.

  8. Bake for 21 minutes.

  9. Allow to cool for 10 minutes before removing from pan.
