During an average school week, I try and pack my 2nd grader, Jaycie,  a lunch every day except pizza day (b/c come on….PIZZA DAY!!) But sometimes (read often) I just don’t have my act together getting all 3 kids and myself out the door on time and she’ll end up buying a lunch. On one such occasion, Jaycie came home from school raving about something called “bosco sticks” Seriously, she went on and on about how awesome they were, how I HAD to make them, how lunchtime was the BEST on bosco stick day. So maybe I’m completely out of the loop, but I seriously had ZERO idea what this amazing culinary invention might be. So naturally, I googled it. Turns out, it’s basically a buttery breadstick filled with mozzarella cheese.

Alright, NOW I see why my 8 year old is singing bosco stick day praises. It’s cheesy carby goodness…. yes please!!! Of course, being the annoying mom that I am, I knew that if I attempted this,  I would most definitely sneak in some whole grains and “health” them up a bit. I based my dough off of my super easy whole wheat pizza pocket recipe and wrapped it around 2% cheese sticks, baked, and brushed with butter.Whole Grain Cheesy Breadsticks

I could only hope that they would pass the now professional “bosco stick taste taster”. Drumroll……. she LOVED them! In fact, everyone devoured them so quickly that I’m pretty sure a double batch is in order next time. This recipe only makes a small batch (10 breadsticks) but feel free to double or triple the recipe. Served with a salad or sliced veggies, this is an easy, HEALTHY, kid friendly dinner that will be a hit all around.

  • Yield: 10 breadsticks
  • Prep Time: 1 hour 30 minutes (includes rise time)
  • Cook Time: 12 minutes


  • 1 cup all purpose flour
  • 1 1/4 cup white whole wheat flour, the 1/4 cup set aside.
  • 1/4 ounce fast rise yeast
  • 1 teaspoon coarsely ground garlic salt
  • 1/2 teaspoon garlic power
  • 3/4 cup warm water*
  • 1 teaspoon olive oil
  • 2 teaspoon honey
  • 10 light or reduced fat mozzarella cheese sticks
  • 1 tablespoon butter
  • 1/4 teaspoon coarsely ground garlic salt


  1. DOUGH

  2. Mix flours (keeping the 1/4 cup set aside), yeast, salt, and garlic powder in a mixing bowl.

  3. In a small bowl, combine water, olive oil, and honey.

  4. Add water mixture to bowl of flour and mix with large flat spoon.

  5. Sprinkle the reserved remaining flour onto the countertop.

  6. Turn dough out on counter top and knead for 5-6 minutes or until dough has some elasticity (when you gently poke it, it regains its shape)

  7. Place in greased bowl, cover gently with dish towel or foil, and place in a warm, draft free area to rise for 1 hour.**


  9. Preheat oven to 350F

  10. Once dough has risen, punch down and roll into 10 small balls.

  11. Wrap dough ball around a cheese stick and place on parchment paper lined baking sheet.

  12. Bake 12 minutes or until lightly browned on the bottom.

  13. Melt 1 tablespoon of butter in microwave and add 1/4 teaspoon garlic salt.

  14. Brush on breadsticks. Serve immediately plain or with marinara sauce.


* The water needs to be hot but not too hot to touch. If it's too hot, the yeast will die and your dough won't rise.
** I usually preheat my oven to 200F, turn it off, and then place the bowl of dough in there. Warm, draft free, and safe from curious little hands.
