Made with whole grains, these soft and chewy sugar cookies are a perfect combination of toasted coconut and dark chocolate. Bonus: 93 calories a cookie!!!!!!

These bits of goodness were fairly easy to lighten up. I reduced the butter, sugar, AND snuck in white whole wheat flour and I swear, they still practically melt in your mouth. I seriously couldn’t stop eating them. So much so, that when my super sweet mother in law stopped by for coffee, I insisted she take the rest with her because I simply couldn’t be trusted around them. I mean, it’s totally fine to live off a diet made entirely of coconut cookies and coffee, right? Because coconut is great and all, but TOASTED coconut drizzled with chocolate? Absolutely irresistible..

In fact, with Easter just around the corner, I’m thinking about whipping up another batch to take to a family gathering.  I think these would made a great addition to any cookie platter. Coconut + Chocolate…. what’s not to love?

Healthy Toasted Coconut Cookies

  • Yield: 28 cookies
  • Prep Time: 20 minutes
  • Cook Time: 10 minutes

Ingredients

  • 3/4 cup white whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 6 tablespoons salted butter, softened
  • 1 egg
  • 2 tablespoons unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 1/4 cup unsweetened coconut, toasted*
  • 1/4 cup dark chocolate chips, melted**

Instructions

  1. Preheat oven 350F

  2. Combine flours, baking powder, and baking soda in a small bowl. Set aside

  3. In a separate bowl, beat butter, egg, applesauce, sugar, and extracts until creamy.

  4. Beat in flour mixture until smooth.

  5. Beat in 1 cup toasted coconut.

  6. Using approximately 1 tablespoon of dough, place on a lined baking sheet about 1 inch apart.

  7. Bake for 8 minutes or until lightly browned on the bottom. Do not over bake.

  8. Remove from oven and drizzle with melted chocolate.

  9. Sprinkle with remaining coconut.

Notes

* Spread coconut on a parchment paper lined baking sheet and bake at 250F for 10-12 minutes or until lightly toasted.
** I simply placed my chocolate chips in a microwave safe bowl and microwaved it in 30 second intervals.
