This is my go-to cookie recipe whenever I need a basic sugar cookie. Mini cookies to cookie cakes, this recipe is the way to go. It’s soft, it’s chewy, it’s sweet but not overpoweringly so. My kids love it when I whip up a batch and I love that I can sneak whole grains even in their desserts. And I admit, a few of these fresh out of the oven with a cup of coffee is pretty awesome:)

Healthy Mini Sprinkle Cookies
- 3/4 cup white whole wheat flour
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 6 tablespoons salted butter, softened
- 2 tablespoons unsweetened applesauce
- 1 large egg
- 2/3 cup sugar
- 1/3 cup + 2 tablespoons sprinkles
Preheat oven to 350F
Combine flours, baking powder, and baking soda in a small bowl. Set aside.
Beat butter, applesauce, egg, and sugar until creamed.
Beat in flour mixture.
Add 1/3 cup sprinkles and beat in completely.
Using 1/2 tablespoon of dough, roll into a small ball and gently press into remaining 2 tablespoons of sprinkles.
Place cookie dough balls on a baking sheet lined with parchment paper.
Bake for 5-6 minutes or until they are lightly brown on the bottom. Cookies will appear under baked when you pull them out but will continue to bake on the hot cookie sheet as they cool.
Remove from cookie sheet after 10 minutes. Enjoy.
