Simple and wholesome with a hint of nutmeg in every delicately sweetened bite, these lowfat and low sugar muffins are absolute perfection on a chilly fall morning. So many things to love about this recipe but I have to say that one of my favorites is how simple it is. Bananas, applesauce, walnuts, flour…. Ingredients you most likely already have on hand .
Another bonus is that you don’t need a mixer, just two bowls and a spoon. SO EASY!!! I also love how the overripe bananas serve to sweeten these muffins naturally, leaving only 1/3 cup brown sugar to sweeten them to perfection. 1/3 cup sugar spread over 12 muffins isn’t too shabby!! At 180 calories per generous muffin, this nutrient filled treat is a fraction of the calories of that muffin at the bakery. If you really want to cut the calories even more, you could always leave out the walnuts. It pains me to say and I hope that you don’t because 1) They are so tasty 2) They are full of healthy fats and are so good for you BUT just in case you do, I’ve provided the nutritional information for the muffins with and without walnuts. No worries, I’ve got your calorie counting back 🙂
Healthy Banana Nut Muffins
- 1 cup white whole wheat flour
- 1 cup all purpose flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3 over-ripened bananas, mashed
- 2 tablespoon oil
- 1 egg
- 1/2 cup unsweetened applesauce
- 1/3 cup brown sugar, packed
- 1 teaspoon vanilla
- 3/4 cup cashew milk (any milk is fine)
- 1/4 cup walnuts, chopped
- 1 tablespoon granulated sugar
- 2 tablespoon walnuts, chopped
Preheat oven to 350F
In a medium bowl, combine flours, baking powder, baking soda, cinnamon, and nutmeg. Set aside.
In a separate smaller bowl, whisk together mashed bananas, oil, egg, applesauce, brown sugar, vanilla, and milk.
Stir the flour mix into wet ingredients, being careful not to over mix.
Gently fold walnuts into batter
Divide batter into greased muffin tins.
Sprinkle tops with granulated sugar and walnuts.
Bake for 23 minutes or until toothpick removes cleanly.
