Healthy Apple Cran-Walnut Muffins

 I am all about the apple recipes right now. I know, I know, I should probably be jumping on the pumpkin bandwagon already and rest assured…. I most definitely will BUT I whipped up these apple muffins the other day and just HAD to share. Here in Michigan, apples are right in season and are ridiculously cheap, making it just impossible to not make apple everything!

Incredibly moist, with sweet apple chunks, tart cranberries, and crunchy walnuts in every bite, you simply will not be able to stop at just one! The good news? You don’t have to because these beauties are super healthy!  With only 2 tablespoons of oil and 1/2 cup of sugar in the entire batter, these muffins are kept moist and sweet with the natural goodness of apples. Add in the fact that they are half whole wheat and have all the fiber that apples and cranberries bring along, and you can feel pretty darn good about your muffin breakfast or snack.

Healthy Apple Cran-Walnut Muffins

  • Yield: 12 muffins
  • Prep Time: 10 minutes
  • Cook Time: 23 minutes


  • 1 cup white whole wheat flour
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 egg
  • 1/2 cup packed brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons oil
  • 1 teaspoon vanilla
  • 1 cup unsweetened cashew milk (any milk is fine)
  • 2 medium apples, peeled and diced
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • Topping: 2 tablespoon chopped walnuts
  • Topping: 2 tablespoons dried cranberries


  1. Preheat oven to 350F

  2. In a medium bowl, combine flours, baking powder, baking soda, and cinnamon.

  3. In a small bowl, whisk together egg, sugar, applesauce, oil, vanilla, and milk.

  4. Pour wet ingredients into the dry and gently mix together with a wide spoon.

  5. Fold in diced apples, walnuts and cranberries, being careful not to over mix.

  6. Divide into a greased muffin pan and sprinkle with toppings. I got 12 good sized muffins out of this batter.

  7. Bake for 23 minutes or until a toothpick removes cleanly.

  8. Allow muffins to cool at least 10 minutes before trying to remove from pan.
