PB Oatmeal Chocolate Chip Cookies
- 1 1/2 cups quick oats
- 1/2 cup white whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2/3 cup smooth peanut butter
- 2 tablespoon unsweetened applesauce
- 1 egg
- 1/2 cup brown sugar, packed
- 2 teaspoon vanilla extract
- 1/3 cup mini semi sweet chocolate chips
Preheat oven to 350F
In a small bowl, combine oats, flour, baking powder, and baking soda.
In a medium mixing bowl, beat peanut butter, applesauce, egg, sugar, and vanilla until smooth.
Add in oat and flour mixture and beat well.
Mix in chocolate chips.
Using a tablespoon of dough, roll into small balls and place 1 inch apart on lined baking sheets.
Bake for 8 minutes.
As soon as cookies are removed from oven, slightly press down on each one with a fork.
Allow to cool completely before removing from pan. Enjoy
