Healthy Turkey Farro Soup

With school in session and fall on it’s way, I say it’s time to bust out your favorite soup pot and start whipping up all those easy and tasty soups that we love so much! This hearty and savory soup is incredibly simple to make. Once you brown the meat, you basically throw everything else in the pot and let it simmer away until you’re ready to eat.

Loaded with lean turkey, fiber rich farro, and all your leftover summer squash, this diet friendly,  nutrient dense soup will fill you up and keep you going. At only 153 calories a cup, you can certainly go back for seconds and leave room for some guilt free dessert. Might I suggest my Light Apple Pie Cupcakes or Lightened Up Pumpkin Cupcakes. Healthy Turkey Farro Soup

  • Yield: 13 cups
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes


  • 19 ounces lean ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 2 small onions, diced
  • 1 large red bell pepper, thickly diced
  • 8 cups reduced fat/reduced sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 15ounce can diced tomatoes
  • 1 medium/large zucchini, chopped
  • 1 medium/large yellow squash, chopped
  • 1 1/4 cup dry quick cooking farro*


  1. In a large soup pot, begin browning ground turkey along with garlic, salt, Italian seasoning, and dried crushed red pepper.

  2. Once halfway done, add onion and bell pepper, stirring occasionally.

  3. Once turkey is cooked through, add chicken broth, garlic powder, basil, and canned tomatoes and bring to a boil.

  4. Add zucchini, yellow squash, and farro.

  5. Reduce heat and simmer until veggies and farro are soft.


* barley can be substituted

This soup makes great leftovers. Be aware that it is a bit thicker the next day since the farro will absorb some of the broth overnight.
