What?! You say, a new recipe?! It’s only been 105 days since my last post! Ok, so yes, I did take a bit of a haiutis over the summer when after a long 9 months and short but very intense labor, we brought home our beautiful daughter, Mya AnnMarie.

As you can imagine, going from a family of 4 to 5 took a bit of adjusting but now that we are finding our new “normal” I almost feel ready to begin my cooking adventures again. Disclaimer: In the coming weeks, you will not find any super complicated dishes or any recipes requiring several dishes….. Ain’t nobody got time for that 😉 These days I’m all about meals that can be whipped up one handed with a baby on my hip while I play referee between a 4 and 7 year old. You feel me? I’m sure all parents out there feel the struggle. It’s a wonderful, beautiful, and blessed struggle to have but geez don’t they drive ya nuts sometimes? Lol.
The first recipe I thought I’d share as a new mom of three, is my incredibly easy and healthy Coconut Flax Granola. Sweet and crunchy, this low fat, fiber rich granola is the perfect balance of coconut, vanilla and honey all rolled into one. Let me tell you, this stuff is addicting! But no worries, at only 190 calories per wholesome serving, you can snack away. Store bought granola is usually packed full of oil, sugar, and crazy calorie counts but this entire batch can be whipped up using only 1/2 cup of honey, zero oil, and all the nutrient rich goodness that flaxseed, whole oats, and coconut bring. I’ve been making a big batch of granola and then eating it for a quick and healthy breakfast all week long. Kept in an air right container, mine is crunchy till the end. I have a small bowl of it with a sliced banana and cashew milk almost every morning (and coffee people…. Do not forget the coffee!!!!) Since I’m breastfeeding, I am usually always hungry but I have found that a bowl of this coconut crunchy goodness helps keep me satisfied all morning. Yay!
- 1 cup quick oats
- 2 cups old fashioned oats
- 1/2 cup golden milled flaxseed (ground flaxseed)
- 2/3 cup sweetened coconut
- 1/2 teaspoon cinnamon
- 1/2 cup honey
- 4 tablespoons unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
Preheat oven to 250F
In a large mixing bowl, combine oats, flaxseed, coconut, and cinnamon.
In a separate bowl, whisk together honey, applesauce, and extracts.
Pour the honey mixture into the bowl of oats and mix well.
Spread evenly on a foil lined and greased baking sheet.
Bake for 80-90 minutes.
Turn off oven and allow the granola to continue to bake as oven cools off.
Once the granola is completely cool, it's ready to eat!
To keep crunchy all week long, keep in an air tight container.
