Easy Applesauce Muffins

Incredibly simple and made with very basic ingredients, these low fat, whole grain muffins are kept moist and sweet with the goodness of applesauce.

I don’t know about you, but sometimes I just want a very simple, basic muffin for breakfast. Nothing super fancy, no explosion of blueberries or chocolate, just a subtly sweet, healthy muffin to drizzle with honey or strawberry preserves and enjoy with a hot cup of tea. Now THAT, is breakfast perfection and is exactly what I have here today.

With only 1/2 cup of sugar and 1 tablespoon of oil in the entire batch, these muffins are kept sweet and moist with 1 1/2 cups of unsweetened applesauce. When I crunched numbers, I was so please to find that they were only 130 calories piece! WIN!

Even better, my kiddos gobbled them up:) My 7 year old daughter loves them with a drizzle of honey while my 4 year old ate 3 plain as soon as I made them and then another 2 for his night snack!  Perfect for breakfast on the go or an afternoon snack, these wholesome muffins are sure to disappear fast.

Easy Applesauce Muffins

  • Yield: 13 muffins
  • Prep Time: 10 minutes
  • Cook Time: 18 minutes

Ingredients

  • 1 cup white whole wheat flour
  • 1 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 1/2 cup unsweetened applesauce
  • 1 tablespoon olive oil
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup nonfat milk

Instructions

  1. Preheat oven to 350

  2. In a small bowl, combine flours, baking powder, baking soda, and cinnamon.

  3. In a larger mixing bowl, whisk the eggs, applesauce, oil, sugars, and milk until smooth.

  4. Add the flour mixture and GENTLY stir with a large spoon until just combined.

  5. Spoon into lined muffin tins. (Muffin tins should be 3/4 full) *

  6. Bake 16-18 minutes or until toothpick removes cleanly.

  7. Serve plain or with honey or jam.

Notes

* I got 13 muffins out of this recipe. If any of the muffin tins are empty during baking, fill halfway with water to ensure even heating.
