If you LOVE deviled eggs but hate all the extra fat and calories that come as a packaged deal then you HAVE to give these beauties a try. Ultra creamy and only 30 calories a piece, these savory deviled eggs are lightened up by replacing half the yolks with whipped cottage cheese.
I absolutely love deviled eggs of almost any variety so I couldn’t have been more pleased when my idea of replacing some yolks and mayonnaise with cottage cheese worked! Seriously, it’s so creamy, you’ll never know the difference. Plus the extra protein takes it to the next level of awesome snack food!!!
A great base recipe for anyone wanting to lighten up and “healthify” deviled eggs. Feel free to make them your own by adding your favorite herbs and spices. For example, if you want your eggs a bit more tangy, add a couple tablespoons of relish. You can also play with the amount of salt and pepper or add fresh parsley, a sprinkle of paprika or even a crumble of bacon.

- 6 eggs, boiled and peeled
- 1/2 cup 1% cottage cheese
- 1/8 teaspoon yellow mustard
- 1/2 teaspoon pickle juice
- Fresh cracked black pepper, to taste
- 2 tablespoons chives, diced
Carefully slice boiled eggs in half. Wet knife to help make a clean slice.
Set aside 3 yolks and discard the rest.
Using a small food processor, blend 1/2 cup of cottage cheese until smooth.
Add the saved yolks, mustard, pickle juice, and black pepper and blend until smooth.
Place yolk mixture into an icing bag with piping tip or a small zip bag with tip snipped off.
Pipe into sliced egg white halves.
Sprinkle with chives.
Refrigerate until ready to eat.
