Healthy Pizza Pretzels

These savory, whole wheat, made-from-scratch soft pretzels are surprisingly easy to whip up, making the perfect afternoon snack or healthy alternative to pizza.

I was so pleased with how these soft pretzels came out. With savory bits of turkey pepperoni and fresh Parmesan in every bite, you get all the pizza flavor with far less fat. Basically anything that’s good for me while giving me the illusion of pizza is a win in my book. Even my 7 year old couldn’t get enough of them. In fact, I’ve started packing her one with a little side of marinara in her lunch. She LOVES it, and I love it knowing that she is filling her growing little body with healthy whole grains. To keep them fresh, I like to make a double batch and then freeze them. I thaw one out the night before, throw it in her lunch box along with some carrots, apple slices, and a string cheese. Easy peazy, one less thing to do in the morning before I take her to school.

I feel as though I should emphasize how easy and simple  this recipe really is. I based it off of the dough I use in my Whole Wheat Pepperoni Pizza Pockets and couldn’t be happier with the result. I actually used to be terrified of working with yeast but have since learned that it’s super easy to use, provided that you remember a few details.

1) Double check the date on your yeast. It does expire and dead yeast will result in a dough that will not rise.
2) Make sure that your water is warm to the touch but not scalding. The warm water activates the yeast, but if it’s too hot touch, it will kill your yeast. Again, not good.
3) Lastly, you’ll want to provide a warm, draft free place for your dough to rise. I like to preheat my oven to 200F and then turn it off as I’m mixing up the dough. This provides a warm place for my dough to rise that is safe from any cold drafts (or curious 4 year old hands)
Soft, tender, and incredibly flavorful, I’m confident that you’ll love them as much as I do!

  • Yield: 6 soft pretzels
  • Prep Time: 1 1/2 hour
  • Cook Time: 13 minutes

  • 1 cup + 2 tablespoons all purpose flour
  • 1 cup white whole wheat flour
  • 1/4 ounce fast rise yeast
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 1/2 servings turkey pepperoni (24 pepperoni slices), diced
  • 1/3 cup fresh Parmesan, shredded
  • 2 teaspoons olive oil
  • 3 teaspoons honey
  • 3/4 cup warm water

  1. In a large mixing bowl, combine flours (keeping 2 tablespoons reserved), yeast, salt, garlic powder, oregano, pepperoni, and Parmesan. Mix well.

  2. In a small bowl or glass, combine oil, honey, and warm water and mix thoroughly.

  3. Add the water mixture to the bowl of flour and mix with a large spoon until combined.

  4. Dump onto a lightly floured surface and knead for approximately 2 minutes, adding up to 2 tablespoons of additional flour until dough is no longer sticky.

  5. Place in greased bowl and lightly cover.

  6. Allow to rise in a warm, draft free area for 1 hour.

  7. Once dough has doubled in size, punch it down, and divide into 6 even balls.

  8. Preheat oven to 375F

  9. Gently roll each ball of dough into an 9-10 inch "snake" and shape into a pretzel.

  10. Place on a parchment paper lined baking sheet.

  11. Bake for 12-13 minutes or until lightly browned on the bottom.

  12. Remove from oven and lightly spray with an olive oil spray. (I used olive oil cooking spray) and sprinkle with garlic salt, if desired.

  13. Serve warm with a side of marinara sauce. Enjoy.
