Healthy Crockpot Stuffed Peppers

Just six basic ingredients, a sprinkle of your favorite spices, and these healthy, savory stuffed peppers can be slow roasting in your crockpot in less than 20 minutes.

I have to confess that prior to this, I had never attempted stuffed peppers in the crockpot, but I’ve been super motivated lately to try and increase my crockpot recipes for a couple reasons.

 
 1) I got the cutest Michigan State crockpot for Christmas
2) My sister recently got a crockpot as well and was so excited that I felt rather inspired.
 3) Admit it, crockpots are awesome.

While planning this recipe out, I knew I wanted a couple things from it.
1) First off, I wanted this to be a dinner that could be prepared in under 20 minutes. Basically just throw it all in a bowl, scoop it in a pepper, and leave them in your crockpot. 4 hours later, you have a delicious, healthy dinner to serve the family that required minimal effort. Win.

2) Second of all, I really wanted something that was filling, full of protein, and low calorie. These peppers meet all of those requirements. Stuffed to the brim with lean turkey, fiber rich garbanzo beans, and just a bit of feta, these peppers have almost 22 grams of protein and only 232 calories. Now, that is what I’m talking about.

These days, I’m not exactly trying to slim down (at 22 weeks pregnant, I’m losing sight of my toes) but by this summer, I can guarantee that I will be making these again and again. I find that the best way for me to lose weight is to make sure I am getting enough protein and fiber. Also, I’m very unpleasant to be around when I’m hungry, so eating foods that are sustaining is a must:) If you’re trying to slim down, then I would suggest servings these with roasted squash and zucchini. If you are just interested in filling your beautiful body with healthy and nutritious foods, then I suggest serving this atop brown rice or quinoa. SO GOOD! How will you serve these tonight?

Healthy Crockpot Stuffed Peppers

  • Yield: 6 stuffed pepper halves
  • Prep Time: 15 minutes
  • Cook Time: 3 hours 45 minutes

Ingredients

  • 1 pound lean ground turkey (I used 1.2 pounds 93% lean ground turkey)
  • 2 small onions, diced
  • 1/2 cup canned garbanzo beans, drained and rinsed, coarsely chopped
  • 1/3 cup sun dried tomato vinaigrette (I used Kraft but any brand is fine)
  • 1/3 cup crumbled feta cheese
  • 1/2 teaspoon garlic salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon fresh ground black pepper
  • 3 large bell peppers, deseeded and halved
  • 1/4 cup crumbled feta cheese

Instructions

  1. In a large bowl, combine turkey, diced onions, beans, vinaigrette, 1/3 cup feta cheese, salt, garlic powder, red pepper flakes, and black pepper. Mix well.

  2. Divide among 6 bell pepper halves.

  3. Place in greased crockpot and roast on high for 3 1/2 hours.

  4. Reduce heat to low setting, and sprinkle with remaining feta cheese.

  5. Continue roasting 15 more minutes, allowing cheese to soften.

  6. Serve over rice or quinoa.
