With Thanksgiving behind us and Christmas only a few short weeks away, I thought it was the perfect time to try my hand at whole grain eggnog cookies.

I absolutely love eggnog. I remember as a kid, my mom buying it for Christmas Eve and giving us each a small glass. Alcohol free of course;) It’s funny how something as simple as a glass of eggnog can really take me back to the excitement of Christmas Eve and anticipation of Santa coming.

 This year though, I have to be a bit more cautious in my eggnog consumption. Being pregnant, if I want to indulge, it has to not only be alcohol free but pasteurized as well (although since we are baking with it, unpasteurized works just fine in this case.)

 I also prefer to buy the light version because… well…. wow, that stuff is RICH! Rich but oh so delicious. The good news is, made with whole grains and only 113 calories a cookie,  you can indulge guilt free in a couple of these for dessert or even as an afternoon snack. With only 1 hour of chilling needed, you could snacking on these in no time at all.

  • Yield: 25 cookies
  • Prep Time: 1 hour 15 minutes
  • Cook Time: 9 minutes


  • 1 cup all purpose flour
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 cup salted butter, melted
  • 1/4 cup light eggnog
  • 1/2 cup white chocolate chips
  • 1/4 cup white sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg


  1. In a small bowl, combine the flours, baking powder, baking soda, cinnamon, and nutmeg.

  2. In a separate bowl, beat the sugar, egg, butter, and eggnog together.

  3. Add the flour mixture and beat until completely combined.

  4. Beat in white chocolate chips.

  5. Chill for at least 1 hour.

  6. Once dough is chilled, preheat oven to 350.

  7. In a small bowl, combine 1/4 cup sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon nutmeg.

  8. Using appx 1 tablespoon of dough, roll into a ball, roll in sugar mix, and place on parchment paper lined baking sheets.

  9. Bake for 8-9 minutes. They may look slightly underdone but will be lightly brown on the bottom. Be careful not to over-bake or the cookies will dry out.
