With a light, crispy sugar coating, white chocolate chips, and that distinct eggnog flavor in every bite, these whole grain holiday cookies are really something special.
With Thanksgiving behind us and Christmas only a few short weeks away, I thought it was the perfect time to try my hand at whole grain eggnog cookies.
I absolutely love eggnog. I remember as a kid, my mom buying it for Christmas Eve and giving us each a small glass. Alcohol free of course;) It’s funny how something as simple as a glass of eggnog can really take me back to the excitement of Christmas Eve and anticipation of Santa coming.
Whole Grain Eggnog Cookies
- 1 cup all purpose flour
- 1 cup white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup white sugar
- 1 egg
- 1/2 cup salted butter, melted
- 1/4 cup light eggnog
- 1/2 cup white chocolate chips
- 1/4 cup white sugar
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
In a small bowl, combine the flours, baking powder, baking soda, cinnamon, and nutmeg.
In a separate bowl, beat the sugar, egg, butter, and eggnog together.
Add the flour mixture and beat until completely combined.
Beat in white chocolate chips.
Chill for at least 1 hour.
Once dough is chilled, preheat oven to 350.
In a small bowl, combine 1/4 cup sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon nutmeg.
Using appx 1 tablespoon of dough, roll into a ball, roll in sugar mix, and place on parchment paper lined baking sheets.
Bake for 8-9 minutes. They may look slightly underdone but will be lightly brown on the bottom. Be careful not to over-bake or the cookies will dry out.
