Bright and fresh, this orange cranberry loaf is a welcomed change of pace in the season of cinnamon and pumpkin spice.
Is it terribly wrong say that I’m just all pumpkined out right now? Don’t get me wrong, I LOVE all those warm and cozy winter spices. Cinnamon, cloves, nutmeg…..they’re the ultimate must haves in most holiday and comfort food baking. But after making Whole Grain Pumpkin Muffins , Lightened Up Pumpkin Cupcakes , Healthy Pumpkin Cranberry Cookies and Lightened Up Pumpkin Pie Cupcakes, I was having some serious cravings for something a bit lighter and more refreshing. And seriously, what is more refreshing than oranges?
The bright flavor that the orange zest brings combined with that little tang from the dried cranberries truly just takes this sweet bread to the next level of perfection. I’ve made this a few times now (it freezes lovely by the way) and I’ve enjoyed it immensely with and without the glaze.
The orange glaze is super simple to whip up and if you’re taking this to a brunch or giving it as a gift, then I highly recommend the glaze. It’s so pretty drizzled on and really makes an afternoon snack feel almost decadent. However, if you are making this for a quick breakfast, then I would recommend leaving the glaze off and smearing just a bit of butter on a freshly toasted slice. It’s seriously just the best.
I calculated the nutritional information for the glaze on and the glaze off for convenience sakes. Incredibly easy to whip up, you may even have all the ingredients on hand, this gorgeous bread could be cooling on your counter in less than an hour. What are you waiting for?
Lightened Up Cranberry Orange Loaf
- 1 cup white whole wheat flour
- 1 cup all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup unsweetened applesauce
- 2 eggs
- 2 tablespoons butter, melted
- 3/4 cup granulated sugar
- 1/2 cup 2% milk
- Zest of 2 navel oranges
- Juice of 1 navel orange
- 2/3 cup sweetened dried cranberries
- 1/2 cup powdered sugar
- Juice of 1/2 navel orange
Cranberry Orange Loaf
Preheat oven to 350
In a small bowl combine flours, baking powder, and baking soda. Set aside.
In a medium bowl whisk together applesauce, eggs, butter, and sugar.
Add milk, orange zest, and orange juice and mix well.
Add flour mixture and gently mix together, being careful not to over mix.
Gently stir in cranberries.
Pour into a greased loaf pan and bake for 40 minutes or until toothpick removes cleanly.
Cool completely before adding glaze .
Whisk powdered sugar and orange juice together until smooth.
Drizzle over loaf. Enjoy.
