Peanut Butter Chocolate Energy Bites

Packed with good for you fiber and protein, these no-bake energy bites are a cinch to throw together and absolutely addicting with that classic chocolate and peanut butter combo!

6 ingredients. Six simple, very basic ingredients.  That’s all you need to whip up these beautiful bites of peanut buttery goodness. It’s almost too easy. I made these today in under ten minutes and I have to admit, they almost didn’t make it into the refrigerator to chill.

 Taste test here, taste test there….. It was starting to get out of control. But I did finally manage to pull myself together and get it in the fridge to chill. The difficult life of a food blogger;) With 5 grams of protein and 3 grams of fiber per serving, these peanut butter bites are the perfect pre-workout or afternoon pick me up snack.

Peanut Butter Chocolate Energy Bites

  • Yield: 15 energy bites
  • Prep Time: 1 hour 15 minutes

Ingredients

  • 2 cups quick oats
  • 1/2 cup golden milled flaxseed
  • 2/3 cup smooth peanut butter
  • 3 tablespoons honey
  • 3 tablespoons unsweetened applesauce
  • Optional: 1/2 teaspoon cinnamon
  • 2 tablespoons semi sweet chocolate chips

Instructions

  1. In a medium bowl, combine oats, flaxseed, and cinnamon. (if using)

  2. In a separate bowl, whisk peanut butter, honey, and applesauce until smooth.

  3. Add peanut butter mixture to the bowl and oats and mix well.

  4. Using a greased mini muffin pan, press 2 tablespoons of dough into each baking cup.

  5. Refrigerate for at least 1 hour.

  6. Using a butter knife, gently remove each peanut butter cup.

  7. In a microwave safe bowl, melt chocolate chips at 30 second intervals, stirring occasionally, until smooth.

  8. Drizzle over energy bites.

  9. Allow 10 minutes for chocolate to set. Enjoy!
