Packed with good for you fiber and protein, these no-bake energy bites are a cinch to throw together and absolutely addicting with that classic chocolate and peanut butter combo!
Peanut Butter Chocolate Energy Bites
- 2 cups quick oats
- 1/2 cup golden milled flaxseed
- 2/3 cup smooth peanut butter
- 3 tablespoons honey
- 3 tablespoons unsweetened applesauce
- Optional: 1/2 teaspoon cinnamon
- 2 tablespoons semi sweet chocolate chips
In a medium bowl, combine oats, flaxseed, and cinnamon. (if using)
In a separate bowl, whisk peanut butter, honey, and applesauce until smooth.
Add peanut butter mixture to the bowl and oats and mix well.
Using a greased mini muffin pan, press 2 tablespoons of dough into each baking cup.
Refrigerate for at least 1 hour.
Using a butter knife, gently remove each peanut butter cup.
In a microwave safe bowl, melt chocolate chips at 30 second intervals, stirring occasionally, until smooth.
Drizzle over energy bites.
Allow 10 minutes for chocolate to set. Enjoy!
