Healthy Chocolate Banana Loaf

Low-fat yet incredibly moist, this lightly sweetened, whole grain banana bread is absolute perfection next to a hot cup of coffee.  This gorgeous bread takes one of my favorite flavor combos (Is there anything better than chocolate and bananas?) and marries them into one beautiful loaf.

 Of course, you could take this to a whole new level if you smear a bit of peanut butter on a slice straight out of the oven. Bananas, chocolate, peanut butter….. I can’t even handle it. Seriously, you might find yourself rationalizing how half a loaf of banana bread is a completely reasonable breakfast 😉 Don’t say I didn’t warn you!

 A few quick things to consider before you whip this up.

1) This recipe requires 6 over-ripened bananas. Yes, you read that right, 6. BUT, it also makes two loaves. See, I was having a bit of a banana situation at the house. I had 3 very brown bananas chilling on my counter, as well as at least 8 brown bananas hanging out in my freezer awaiting their fate. The situation was spiraling out of control. Clearly I’ve been overestimating our banana consumption for some time. And so, my 6 banana, banana bread recipe was born.

2) This bread is not super sweet. At a mere 1/2 cup per loaf, I rely heavily on the natural sweetness of the bananas, so it is very important that your bananas be very ripe. The browner the banana, the sweeter it is. If you find yourself having to work with only semi over-ripened bananas or you prefer your banana bread on the extra sweet side, then I would suggest adding an extra 1/4-1/2 cup of sugar per batter.

3)  If you find yourself not needing 2 loaves (huh? I don’t get it…. ) you could half the recipe OR you could freeze the extra loaf for another time. I ended up doing what I normally do with my sweet breads and cut it into even slices, then wrapped each one up individually to freeze. I either zap one in the microwave for an easy breakfast or grab one on my way out the door for a healthy afternoon snack if I know I have a lot of running around to do.

Healthy Chocolate Banana Loaf

  • Yield: 20 slices or 2 loaves
  • Prep Time: 20 minutes
  • Cook Time: 40 minutes

Ingredients

  • -Plain Banana Batter-
  • 3 overripe bananas
  • 2 eggs
  • 2 tablespoons olive oil
  • 1/3 cup plain nonfat yogurt
  • 1/2 cup brown sugar (add an additional 1/4-1/2 cup for a sweeter bread)
  • 1 teaspoon vanilla
  • 1 cup white whole wheat flour
  • 1 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • Optional 2-3 tablespoon milk
  • -Chocolate Banana Batter-
  • 3 overripe bananas
  • 2 eggs
  • 2 tablespoon olive oil

  • 1/2 cup brown sugar (add an additional 1/4-1/2 cup for a sweeter bread)
  • 1 teaspoon vanilla
  • 3/4 cup white whole wheat flour
  • 3/4 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Optional 2-3 tablespoon milk

Instructions

  1. -Plain Banana Batter-

  2. Preheat oven to 350

  3. In a medium bowl, mash bananas until smooth.

  4. Add eggs, oil, yogurt, sugar, and vanilla and mix well.

  5. In a separate bowl, combine flours, baking powder, baking soda, and cinnamon.

  6. Add the flour mixture to banana mixture and gently stir, being careful not to over mix.

  7. If batter is too thick, add 2-3 tablespoons of milk.

  8. Set aside.

  9. -Chocolate Banana Batter-

  10. In a medium bowl, mash bananas until smooth.

  11. Add eggs, oil, yogurt, sugar, and vanilla and mix well.

  12. In a separate bowl, combine flours, cocoa, baking powder, and baking soda.

  13. Add the flour mixture to banana mixture and gently stir, being careful not to over mix.

  14. If batter is too thick, add 2-3 tablespoons of milk.

  15. -Putting it together-

  16. Grease two standard sized loaf pans.

  17. Using a 1/4 cup measuring cup, place scoops of the banana batter and chocolate banana batter in a checkered pattern in both pans.

  18. Using the remaining batter, repeat a second layer of the checkered pattern. Make sure the second layer has plain banana batter over the chocolate batter and vise versa.

  19. Bake for 40 minutes or until a toothpick removes cleanly.

  20. Enjoy plain or maybe with a smear if your favorite nut butter.
