Simple Low-fat Beef Chili

Simple and incredibly flavorful, this low-fat chili can be ready to eat in under 40 minutes. There are just so many things that I just love about this chili.

 So many things in fact, that I feel compelled to make a list. I’m a list kind of person 😉 So bear with me…..

1) Super basic and cheap ingredients. Lean ground beef, potatoes, onion, beans, diced tomatoes, green chilies, poblano pepper….. Nothing too crazy here.
2) While the green chilies and poblano pepper pack this hearty bowl of awesomeness with tons of flavor and spice…. It isn’t too spicy to be family friendly. My husband AND my 6 and 3 year old LOVED it! I don’t know about you, but some days it can feel simply impossible to make a dinner that the whole family will actually eat. On the rare occasion when my entire family gobbles up the meal, it’s such a feeling of victory!! (cue my incredibly dorky mom victory dance!)

3) Prep work included, you can have this on your table in under 40 minutes! In the whirlwind of after-school chaos, I find it super important to have a surplus of quick and easy dinner ideas. This totally fits the bill. You could even make a double batch and freeze the leftovers for next week’s dinner. I mean, I’m rarely that put together but you could totally do it;)
4) One hearty serving is only 220 calories with 19 grams of protein, 7 grams of fiber, and only 6 grams of fat (only 2 grams of saturated fat) . With numbers like that, you should definitely be thinking about what you’re making for dessert!

Simple Low-fat Beef Chili

  • Yield: 7 servings (1 cup)
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes


  • 1 pound 93% lean ground beef
  • 8 ounces (2-3 small/medium) russet potatoes, diced small
  • 1 large yellow onion, diced small
  • 1 medium poblano pepper, deseeded and diced small
  • 1 15 ounce can diced tomatoes
  • 1 8 ounce can tomato sauce
  • 1 4 ounce can mild diced green chilies
  • 1 15 ounce can black beans, drained and rinsed
  • 2 teaspoon coarsely ground garlic salt, more to taste
  • 2 teaspoon garlic powder
  • 3 teaspoon chili powder
  • 2 teaspoon cumin powder


  1. In a large greased pan, begin browning ground meat on a medium-medium low heat.

  2. While meat is still slightly pink, add potatoes, onions, and poblano pepper.

  3. Once the meat is cooked through and potatoes have begun to soften, add diced tomatoes, tomato sauce, and green chilies and mix well.

  4. Add beans and spices and simmer for 10-15 minutes or until the potatoes have softened.

  5. Serve with cornbread, crackers, or a simple greed side salad. Leftovers reheat or freeze well.
