Apple. Caramel. Oatmeal. Cookies. Really, no other explanation is needed.
The only question that remains, is why it’s taken me this long to share with you? I feel as though I should warn you though, these oatmeal apple caramel cookies are dangerous. Do not, I repeat, do NOT make these RIGHT before dinner or things may happen that I will not be held responsible for. Choices will be made and cookies may or may not become your first course. Apples…. Oats……it’s totally acceptable to serve these as the main dish right?
I’ve made several batches of these this week and I have to say, I love them more and more. With oats, whole wheat flour, and dried apples as prominent ingredients, these cookies are hearty and filling without being dense or heavy. Bonus: sweet, creamy, dreamy caramel in every bite. Are you drooling yet? I really wanted to capitalize on the apple and caramel favors so the cinnamon lover in me actually managed to only add 1/2 a teaspoon. Just enough to provide the tiniest hint but not so much to overtake the other favors.
These cookies do clock in a bit higher in the calorie department than a lot of my cookies BUT they are also much larger than most of my cookies. I used 2 tablespoons of dough per cookie to create the best apple caramel experience possible. With no chilling required, you can have these cooling on your counter, ready to devour in less than 30 min. What are you waiting for?!?!
Apple Caramel Oatmeal Cookies
- 1 cup quick oats
- 1/2 cup white whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 6 tablespoon butter, softened
- 2 tablespoon unsweetened applesauce
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dried apple slices, diced
- 1/2 cup Kraft caramel bits
Preheat oven 350F
In a small bowl combine oats, flours, baking powder, baking soda, and cinnamon.
In a medium bowl, beat butter, applesauce, and sugar together.
Add egg and vanilla and beat well.
Beat in flour mixture until smooth.
Stir in dried apple and caramel bits.
Using 2 tablespoons worth of dough, spoon onto baking sheets that have been lined with parchment paper.
Bake for 8 minutes.
Allow to cool for 10 minutes before removing.
