Shredded yellow squash is the secret to keeping these low fat savory meatballs tender and moist. Ready to eat in under 40 minutes from start to finish, this is a simple, delicious dinner for those busy weeknights when you just don’t have tons of time to spend in the kitchen.

Bonus: this recipe is extremely family/kid friendly. How so, you ask? It’s all in the color of the squash. My daughter, Jaycie, is actually a great meatball eater. She LOVES meatballs, meatloaf, meatloaf sandwiches, meat muffins (what?!? Think mini meatloaf in muffin tins) What she does not like is “stuff” in her meatballs. “Stuff” could be anything from spinach, zucchini, feta….. You get the picture.

 The trick was finding a vegetable that would keep the meatballs moist, add some bonus nutrition, and would not show up in the light color of ground turkey. Then it hit me…. beautiful, versatile yellow squash. Shredded, this vegetable is practically undetectable.

 Funny enough, Jaycie doesn’t mind the squash being there (she saw me shredding it), she just doesn’t want to be able to see it in her meatball. I can work with that:)

  A few quick notes before you get cooking.
 1) I used all dried herbs and seasonings but you are more than welcome to sub in fresh if you have them.
2) After shredding the squash, it’s super important that you take a few paper towels and press the excess moisture out. Squash has a ton of water in it and too much liquid will make your meatballs fall apart.
3) This dish can can served several different ways. My kiddos love it over spaghetti but sometimes I like eat it over roasted zucchini or spaghetti squash  as a lower carb/calorie alternative. The leftovers also make incredible  meatball sandwiches.

Easy Turkey Meatballs In Marinara

  • Yield: 8 Servings ( 3 meatballs + Sauce)
  • Prep Time: 20 minutes
  • Cook Time: 20 minutes


  • -Marinara Sauce-
  • 28 ounce can crushed tomatoes
  • 14.5 ounce can diced tomatoes
  • 8 ounce can tomato sauce
  • 1 1/2 teaspoon coarse garlic salt
  • 2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried crushed sage
  • 1 pinch dried rosemary
  • -Turkey Meatballs-
  • 19.2 ounces lean ground turkey (that's what my turkey comes in, 1 pound would be fine)
  • 1 large egg
  • 2 large egg whites
  • 1/4 cup Italian seasoned bread crumbs
  • 2 tablespoon golden milled flaxseed
  • 1 tablespoon shredded Parmesan
  • 1/2 teaspoon coarse ground garlic salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 medium yellow squash (shredded, pressed with paper towel)


  1. -Marinara Sauce-

  2. In a large pan, bring the crushed tomatoes, diced tomatoes, tomato sauce to a simmer.

  3. Stir in seasonings.

  4. Continue simmering as you prepare the meatballs.

  5. -Turkey Meatballs-

  6. In a medium bowl, combine ground turkey, egg, egg whites, breadcrumbs and flax.

  7. Stir in parmesan and seasonings.

  8. Add shredded squash (don't forget to press out excess moisture) and mix well.

  9. Using 2 tablespoons worth of meat, roll into balls and gently drop into simmering marinara sauce.

  10. Cover and cook for 10 minutes.

  11. Carefully turn over any meatballs not covered in sauce.

  12. Cover and cook an additional 10 minutes.

  13. Serve over pasta, roasted squash, or in a bun. Enjoy.
