3 Ingredient Banana Peach Ice-Cream

Creamy bananas, smooth yogurt, and sweet peaches are all you need to make this gorgeous “ice-cream” treat.

When my kiddos saw me photographing this frozen goodness, they were only mildly interested. However, when I scooped it onto ice-cream cones, it was all “oh where have you been my whole life!!!”

My son was a huge fan and gobbled his up at an alarming rate. Jaycie loved the banana portion but as I expected, was not a fan of the bits of peach swirled throughout. (I know, I don’t get it, it’s only the best part!!) As previously discussed, she doesn’t like “stuff” in her yogurt, ice-cream, meatloaf, tomato soup ect. So if you are also not a fan of “stuff” in your ice-cream, I would suggest puréeing the peaches instead of dicing them. Either way, the peach compliments the oh-so-creamy banana in the best of ways.

 I advice you to stock up on bananas and peaches because this stuff goes FAST! No worries though,  It’s so easy to whip up a double batch and really, who wants to say no to kids basically begging for peaches and bananas. I’m gonna call this definite win in the healthy treat department!!

As a side note, my 6 year old daughter insisted that the best way to photograph this would be for me to snap a picture with just the ice-cream and her thumbs up sign. She was so confident and cute that I couldn’t resist:)

3 Ingredient Banana Peach Ice-Cream

  • Yield: 3 servings
  • Prep Time: 2 1/2 hours (includes freeze time)

Ingredients

  • 2 medium ripe bananas
  • 1/4 cup plain nonfat yogurt
  • 1/2 large peach, diced or puréed

Instructions

  1. Purée bananas and yogurt using a food processor or blender.

  2. Stir in peaches.

  3. Pour into a small bowl or pan. (I used a loaf pan)

  4. Place in freezer for 2-3 hours until completely frozen.

  5. Once frozen, cut into large pieces and place in food processor.

  6. Purée until smooth.

  7. Scoop into bowls or onto cones and serve immediately. (If you find that it won't scoop easily, allow the frozen purée to sit for a few minutes to thaw just a bit. )
