Light and moist, this whole grain banana bread is taken to new levels of amazing with the addition of a cinnamon sugar swirl and ultra decadent pecan praline glaze. And the best news is, you get all this deliciousness for only 260 calories. That my friends, in the world of sweet quick breads and you know….. PECAN PRALINES, is only short of miraculous.
I consider myself sort of an expert on sweet breads…. Ok ok ok, I love baking and I love carbs and I love trying new recipes and creating my own so that’s pretty much the extent of my expertise. But what I’ve noticed about most of the recipes I’ve seen in the past is that a ton of sugar and a fairly ridiculous amount of oil are usually involved. So much that it takes a beautiful breakfast or snack item and puts it in the dessert category in terms of sugar, fat, and calories. The thing is…. I want to have banana bread for breakfast or with my afternoon coffee, not for dessert!!! Dessert should definitely be reserved for something like Chocolate Chip Cheesecake Brownie Cupcakes With that in mind, I tried to incorporate some whole grains and to reduce the sugar as much as possible while still keeping the pecan praline glaze because…. well….. It’s pecan praline glaze!!!
A great way to ensure that your bread will be sweet enough is to make sure your bananas are super ripe. Not just-a-few speckles ripe but a much-too-dark-to-eat-why-have-
Cinnamon Swirl Banana Bread With Pecan Praline Glaze
- 3 medium overripe bananas
- 2 eggs
- 2 tablespoons olive oil (any oil is fine)
- 1/3 cup plain nonfat yogurt
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 cup white whole wheat flour
- 1 cup all purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- -Cinnamon Swirl-
- 2 tablespoons granulated sugar
- 1 1/2 teaspoon cinnamon
- -Pecan Praline Glaze-
- 1 tablespoon salted butter
- 1/4 cup brown sugar, packed
- 2 tablespoons heavy cream
- 1/4 cup pecan pieces
-Cinnamon Swirl Banana Batter-
Preheat oven to 350
In a medium mixing bowl, mash bananas.
Add eggs, oil, yogurt, brown sugar, and vanilla and whisk until smooth. Set aside.
In a separate bowl, combine flours, baking soda, and baking powder.
Gently stir the flour mixture into the wet ingredients being careful not to over mix. Set aside.
In a small bowl, combine granulated sugar and cinnamon.
Pour half the batter into a greased standard sized loaf pan.
Sprinkle evenly with cinnamon sugar mixture.
Gently smooth the remainder of the batter over the cinnamon sugar layer.
Bake for 45-50 minutes or until a toothpick removes cleanly.
-Pecan Praline Glaze-
As banana loaf cools, melt butter on a low heat in a small sauce pan,
Gently whisk in sugar and cream.
Continue to heat until mixture begins to boil, stirring almost continuously.
Continue to simmer until caramel thickens slightly. (it will still be pretty runny at this point)
Stir in pecans and take off of the heat.
Drizzle over banana bread. Enjoy!
* You could also make this as muffins or a bundt cake. Keep in mind that the baking times will be affected.
