Anytime Peach Cobbler

Peach cobbler (in my ever humble opinion) is the perfect dessert any time of year. A-MAZING on a hot summer day with a scoop of vanilla bean ice-cream just beginning to melt on top; I find it equally irresistible on a cold winter’s night, snuggled up by the fire, big bowl of peachy goodness topped with fresh whipped cream. I mean seriously, let’s just agree to eat this everyday ok?anytime peach cobbler

What I love about this recipe is that it begins with frozen peaches. So whether they are peaches from your local grocery store or those incredible ones super-you took the time to slice and freeze over the summer, you’ll be good to go. Another thing I love about this cobbler (besides the sneaky whole grains and massive portions) is how juicy it is. I love to take that cinnamony peachy nectar left on the bottom and drizzle it over a scoop of ice-cream or whipped cream right before serving. It’s basically a piece of heaven in a bowl. However, if you like a cobbler that’s more held together or less juicy, you could always sprinkle a bit of cornstarch in with the peaches or only use 3-4 cups. Really though, I’m not sure who could say no to a drizzle of peach nectar…. From the heavens…. 😉

Anytime Peach Cobbler

  • Prep Time: 20 minutes
  • Cook Time: 55 minutes


  • 5 cups sliced frozen peaches
  • Juice from 1/2 medium lemon
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 cup all purpose flour
  • 1/2 cup white whole wheat flour
  • 2 teaspoon baking powder
  • 1 pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 cup plain fat free Greek yogurt
  • 2 tablespoon brown sugar
  • 2 tablespoon white granulated sugar
  • 1/2 cup 2% milk
  • 1 teaspoon vanilla extract
  • Juice from 1/2 medium lemon
  • 1/4 stick frozen butter
  • 1 tablespoon granulated sugar


  1. In a medium bowl or Tupperware, combine frozen peach slices, juice of 1/2 lemon, 1/4 cup granulated sugar, 1 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg.

  2. Shake well and allow to thaw overnight in the refrigerator*.

  3. Preheat oven to 350

  4. In a greased deep pie dish (a 9x9 square baking dish would work as well) evenly spread out the thawed and sweetened peaches. Set aside

  5. In a small bowl, combine flours, baking powder, salt, cinnamon and nutmeg

  6. In a medium mixing bowl, whisk together the yogurt, sugars, milk, juice of 1/2 lemon and vanilla.

  7. Add the flour mixture and gently stir until just barely combined with a large spoon.

  8. Using the larger side of a grater, shred the frozen butter.

  9. Gently fold half of the shredded butter into the batter.

  10. Sprinkle half of the remaining butter over the peaches.

  11. Drop large spoonfuls of dough over the peaches. (I divided the dough into 8 large spoonfuls to match the serving size but it’s up you)

  12. Sprinkle remaining butter and 1 tablespoon sugar

  13. Bake for 55 minutes. Check at the 40 minute mark. If it’s browning too much, lightly cover with a sheet of foil.**

  14. Allow to cool for 10 minutes before serving.

  15. Best when served warm with ice cream or whipped cream


* Now would be a great time to place that stick of butter in the freezer.
** The baking time will be closer to 40 minutes if you only use 3 cups of peaches
