Summer Veggie Stirfry With Turkey Kielbasa

Colorful peppers, summer squash, red onion and lean smoked turkey sausage make a simple and flavorful meal that comes together in under 30 minutes.

I absolutely  love beautiful food (says the food blogger… go figure) and I especially love beautiful food that is loaded with fresh summer veggies. And this dish…. Oh. My. Goodness, This gorgeous dish…. The peppers, the onions, the squash all sautéed in a simple garlic, salt, paprika and crushed red pepper mix. Throw in some easy pre-cooked turkey sausage and you are good to go. At only 159 calories per very full cup, this flavorful dish is perfect for those watching their calorie intake. I’ve made this dish a few times and have found that there are countless ways to serve it. One of my favorites is over brown rice with a sprinkle of feta. You could also serve this in a pita or tortilla or use the leftovers in an egg scramble the next morning. So many delicious options. As a side note, if you are super sensitive to spice, consider decreasing the crushed red pepper to 1/8 teaspoon. The first time around I used 1/2 teaspoon but found it to be too spicy for the kids so I kept it at 1/4 teaspoon the next time and everyone was happy:)

Summer Veggie Stirfry With Turkey Kielbasa

  • Yield: 5 servings (1 cup)
  • Prep Time: 15 minutes
  • Cook Time: 15 minutes

Ingredients

  • 1 medium- large bell pepper (any color), sliced into strips
  • 1 medium red onion, sliced
  • 2 medium zucchini, sliced into medallions
  • 1 medium yellow squash, sliced into medallions
  • 3/4 teaspoon coarse garlic salt
  • 3 teaspoon fresh minced garlic
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper
  • 1 link (14oz) pre-cooked hardwood smoked lean turkey kielbasa (sausage) Cut into bite sized pieces

Instructions

  1. On a medium low heat (my stove read a 4) combine the peppers, onion, zucchini, squash, and garlic salt in a large greased pan and cover.

  2. Allow vegetables to sauté for 15 minutes or until they begin to soften stirring every 4-5 minutes.

  3. Add the remaining spices and continue to sauté on a medium to low heat for another 5 minutes stirring halfway through. 

  4. Stir in the sliced sausage and cook another 3 minutes until heated all the way through.

  5. Serve over brown rice or pita bread with a sprinkle of feta cheese.
