Honey Almond Energy Bites

7 simple wholesome ingredients are all you need to make this easy protein and fiber packed snack. Oats, bran, flax, honey, almond butter, applesauce, cinnamon + 1 food processor and a small bowl is all that stands between you and these…..
And honestly if you don’t have a  food processor, you could probably make it work with a table blender or even just some good ole elbow grease!. All that to say that you can get away without one but I LOVE how quick and easy these energy bites come  together with it. I can seriously eat almond butter and honey on almost anything. Bread, muffins, crackers, pears, apples… Spoon….. Ok, fine spoonfulssss
Adding just a bit of cinnamon to this ROCKIN flavor couple adds a new depth of flavor particularly when combined with the oats, bran, and flax. These energy bites are really just that. Bites of energy. I’ve been snacking on a couple about 30minutes prior to my workout and I am loving how it helps sustain me through my run without weighing me down. I’m usually running or lifting mid morning and often am hit by that post coffee energy drain/pre-lunch hunger. Lately though, I eat a couple of these before I change and get my little man all set (toys, juice box, snacks, cartoon…. It takes a lot of prep work to entertain a 3 year old while you workout!!! Gotta have all your bases covered) and I’ve noticed that I definitely have more energy.
The honey provides a little sugar burst, the protein and complex carbohydrates from the almond butter, oats, flax and bran really sustain that high and keep me moving. Anyways, enough talk of workouts (I’m super motivated now that the sun has made an appearance!) These bites are also great for that commute to work or afternoon slump. However you need it, I think you’ll agree that these power bites are simple to make and delicious anytime of the day!
