I had some bananas sitting on the counter becoming quite brown and a ridiculous amount of strawberries in the fridge (at 88cents a pint, I kinda went a little crazy) so the idea of strawberry banana bread wasn’t exactly a stretch. But I wanted this bread to be more breakfast worthy than dessert-ish, which is why I opted for 1 1/2 cups of the whole wheat flour. I have to admit though, that with the whole wheat flour and all the moisture from the bananas and strawberries, I was a bit unsure of how the texture was going to turn out. I felt like I was risking making a dense, wet bread. GOOD NEWS though! Not dense or wet AT ALL!! Moist in the most perfect of ways? Yes! But dense and heavy…. Absolutely not!
I was seriously so happy after my first… and second… and third… (Ok you get the picture) bite. Bursting with sweet strawberries, this light whole grain banana bread has zero added fat!!196 calories per generous slice makes this a great breakfast or snack choice! I also think that it would make a great gift, wrapped up in parchment paper and tied with a bright ribbon. What better way to celebrate spring than with a beautiful strawberry banana bread loaf?
Of course, I’m one of those people who thinks that food is the perfect gift for any occasion. Breads, muffins, cookies and granola packed up in a pretty basket with some fancy coffee and a cute mug… I mean come on, is it just me? Cute, yummy, useful… It’s a win right? I don’t know, I like to show my love through food (my husband likes to say that there’s a little Polish grandmother living inside me who is always trying to feed people ) I just think there’s no better way to show someone that you care:) Of course, I may or may not take it to the extreme. Is it weird to send the guy who installs your blinds home with truffles? Bake the group of workers repairing your basement rolo cookies? Send muffins to the guys constructing the house next door? Hmmmm maybe there is a little grandma inside me who is always trying to feed people!!! But back on topic!!! STRAWBERRY BANANA BREAD…. Make it for yourself, as a gift or preferably both. You won’t regret it!
Whole Grain Strawberry Banana Bread
- 1 1/2 cups white whole wheat flour
- 1 cup all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- pinch salt
- 3 medium over-ripe bananas (mashed)
- 2 eggs
- 2 teaspoon vanilla extract
- 2/3 cup granulated sugar
- 1/2 cup fat-free half and half
- 1 cup diced strawberries
- 1/2 tablespoon granulated sugar (optional)
Preheat oven 350F
In a small mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt and set aside.
In a medium mixing bowl, mash the over-ripe, browned bananas.
Add the eggs, vanilla, and sugar and stir briskly using a fork or whisk.
Stir in the half and half.
Using a wide spoon, GENTLY stir in the flour mixture. DO NOT over-mix.
Before the dry ingredients are fully incorporated, add the strawberries and continue to stir until everything is "just barely" combined. Over-mixing will produce a denser, chewier bread.
Pour into a greased loaf pan.
Sprinkle 1/2 tablespoon sugar over the top. This will produce a crispy, sweet, crusty top...the best part in my opinion but it is entirely optional. I did include it in the nutritional information.
Bake for appx 50 minutes or until toothpick removes cleanly. If you find that the top is browning too much, gently cover with a sheet of foil.
Allow to cool before removing from pan. Because of the bananas and strawberries, I would refrigerate any leftovers after 1-2 days. I actually sliced mine up, wrapped each slice individually and froze it. Now every morning when I wake up, I let it thaw for appx 30 minutes and then pop it in the toaster. PERFECTION!
