Strawberry Banana Bread French Toast with Strawberry Orange Topping

Whole grain strawberry banana bread dipped in cinnamon infused egg whites, cooked until perfectly toasty brown and topped with a fresh strawberry orange topping…..

Oh I’m sorry, did I not mention that I decided to celebrate spring in all things food related until the end of time? Ok yes, I might be getting just the teeny tiniest bit carried away but come on!? Spring is here!!!!! Aaaand now I have probably condemned us to one last snow storm :/ Seriously though, it’s hard to not get super excited about the snow melting and your face not hurting and risking frostbite just because you decided to check the mail. I love running outside verses the treadmill,  planning which flowers I’ll plant in the flowers beds (and then deciding to just call my mom and ask her which ones are impossible to kill) , sipping my coffee and nibbling (read inhaling) this French toast while the kids ride their bikes through slushy mud puddles (spring around here is a bit messy with all the melting snow but TOTALLY worth it!). Yay for spring! I’m thinking though that you didn’t come here to listen to me gush on and on about spring. You’re here for this……

Now I warn you, this is a two part recipe. I suggest making your strawberry banana bread one day and eating it warm, straight from the oven with a smear of butter because….. well…. YUM! And then perhaps the next day or even that evening if you’re into the whole brinner thing (breakfast for dinner= best idea EVER)  then bust out this low fat, low sugar, fruit laden, whole grain French toast. I warn you though, there will be NO leftovers once you introduce this little number…. In fact, I suggest making two strawberry banana loaves…it is THAT good!

Strawberry Banana Bread French Toast with Strawberry Orange Topping

  • Yield: 2 servings
  • Prep Time: 15 minutes
  • Cook Time: 10 minutes

Ingredients

  • 1 cup diced strawberries
  • 1 teaspoon granulated sugar
  • juice of 1/2 orange
  • 2 slices Whole Grain Strawberry Banana Bread
  • 1/2 cup liquid egg whites
  • 2 tablespoons fat free half and half
  • 1/4 teaspoon cinnamon

Instructions

  1. In a small bowl combine strawberries, sugar the juice of 1/2 an orange.

  2. Cover and place in the refrigerator.

  3. Pre-heat skillet on a medium heat. (My small skillet was set at 275)

  4. In a wide and shallow bowl, whisk the egg whites, half and half, and cinnamon together.

  5. Soak the slices of strawberry banana bread in the egg mixture* for appx 20 seconds on each side.

  6. Carefully place on a greased, hot skillet and cook until the bottom is a light crispy brown (4-5 minutes for me)

  7. Flip over and continue to cook until a light crispy brown.

  8. Remove from heat and place on serving plate.

  9. Top with strawberry orange topping and serve immediately.

Notes

I served mine with orange slices and black coffee. Turkey sausage or bacon would also make a great side with this.
* You will have quite a bit of egg left, enough to soak at least 2 more slices of bread.  The nutritional data is calculated after subtracting any egg white dip that was left over.
