My daughter LOVES meatballs, meat loaf, meat muffins…..wait…WHAT?!?! Ok yes, sometimes I take this recipe and make it in a muffin tin. Jaycie, my 6 year old, calls them meat muffins and will literally fight you for the last one. I know, I know, the name is questionable, which is why I opted to make them in meatball form for you. For some reason, I didn’t think I’d draw a huge crowd with the title of “meat muffins”. She loves it when I make them on Sunday and then can pack her meatloaf sandwiches throughout the week for lunch. Yes, she is quite possibly the ONLY 6 year old in school chowing down on a meatloaf sandwich. She also is quite fond of pickled eggs but that’s a different story for a different day. I only recently started adding a cube of cheddar in the center which obviously moved this meal up a few notches in my husband’s book (beef + cheese=winner)But let’s be honest, when doesn’t cheese take a dish to next level?
Basically what I’m trying to say is that this meatball recipe is easily one of my family’s top favorite meals. There’s very little prep work involved so it literally only takes a few minutes to prepare. Just pop them in the oven for a bit, steam or roast some veggies and potatoes and you can easily have this on the table in 30-40 min tops. This is a dinner that will not only fill you up but keep you full all evening long. Like I said..WINNER!
Cheddar Filled Meatballs (HEALTHY!)
- 1 pound lean (93%) ground beef (ground turkey can be substituted)
- 1 egg
- 1 egg white
- 1 tablespoon worcestershire sauce
- 2 tablespoon Italian breadcrumbs
- 2 tablespoon ground flaxseed
- 2 teaspoon dried minced onion
- 1 teaspoon garlic powder
- 1/2 teaspoon coarsely ground garlic salt
- 1/4 teaspoon black pepper
- 15 small cubes of cheddar (1 cube=16 calories)
Preheat oven 350F
In a medium sized mixing bowl combine ground beef, eggs and worcestershire sauce.
Add breadcrumbs, flaxseed, and seasonings and mix well.
Take 2 tablespoons of meat and wrap around 1 cheese cube forming a ball. You will get about 15-16 meatballs depending on how accurate your 2 tablespoon measurement was.
Place on a foil lined and greased cookie sheet.
Bake for 17-18 minutes.
Allow to cool for about 5 minutes before serving.
Roasted veggies and potatoes make great side for this. Reheats well for leftovers.
