White Bean Peanut Butter Cupcake Bites

First and foremost, let me reassure you that these cupcakes taste NOTHING  like beans. You would never ever guess that these little beauties had an entire can of beans hidden in them.  Peanut butter and chocolate with an ever so slight hint of brown sugar and vanilla….those are the flavors that are making your taste buds dance and will have you reaching for just one more.

Great Northern Beans are pureed and  basically replace most of the flour in this recipe but again, unless you told someone, they would never guess. Now me, I’m so darn proud of my little bean creations that I tell everyone, watch their face contort slightly before they recover and politely say how “interesting” that is, and then gleefully watch as their tentative little bite reveals how very un-beanlike this cupcake is. MUAHAHAHA…… Yes, it’s possible that I need to get out more if I find this all so entertaining but it is such fun to convert bean haters!! My very favorite thing about these cupcakes (besides the fact that they are only 60 calories apiece!!) is most definitely the TEXTURE!

You might be worried that a cupcake made with beans would be dense and not airy at all….quite to the contrary my friend. The best way that I can describe them is a cross between a blondie and a cupcake…but not at all muffin like. Am I making any sense? I was going to try and get all cute and make up a word combining blondie and cupcake….ideas? anyone? yeaaaaaaaa, me neither 😉 OH, one more thing… did I mention that you could be inhaling these with a hot cup of coffee in less than 30 minutes???

White Bean Peanut Butter Cupcake Bites

  • Yield: 39 mini cupcakes
  • Prep Time: 10 minutes
  • Cook Time: 13 minutes

Ingredients

  • 1 14 ounce can of Great Northern Beans (drained and rinsed well)
  • 4 ounces unsweetened applesauce ( I used one of those snack sized containers)
  • 2/3 cup brown sugar
  • 2/3 cup smooth peanut butter
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 3 tablespoons white whole wheat flour
  • 3 tablespoons white whole wheat flour
  • 1 pinch salt
  • 1/3 cup + 1 tablespoon mini semi sweet chocolate chips

Instructions

  1. Preheat oven 350F

  2. In a large food processor (A blender would work as well) puree the drained and rinsed beans until smooth.-

  3. Add the applesauce. sugar, peanut butter, egg, and vanilla and blend well.

  4. Add the flour, baking soda and salt and once again blend until smooth

  5. Stir in the 1/3 cup of mini chocolate chips.

  6. Line your mini muffins pan and evenly divide the batter. I got 39 mini cupcakes. If you don't use liners, grease well or your cupcakes might stick and tear apart when you remove them.

  7. Sprinkle the tops of the cupcakes with the reserved tablespoon of mini chocolate chips.

  8. Bake for 13 minutes or until a toothpick come out clean.

  9. Allow to cool before removing from pan.
