Fudgy Black Bean Brownie Bites

Yes, you read that correctly. One of the main ingredients here is black beans but seriously, there isn’t even one ounce of…not the teeniest tiniest bit of black bean texture or flavor. These brownies taste rich and decadent with the chocolatiest of chocolate flavors (did I just make that word up?)

 It sounds impossible but just one bite of these chewy fudgy delights and you will be hooked. And the best  part is ….. 3 brownie bites are only 120 calories. Sure, a few of those calories are coming from sugar (this IS a brownie), BUT none are coming from butter or oil. The pureed beans and applesauce ensure that these bites do not become dry and…well…un-brownie like. I hate it when I’m craving a brownie and instead I get chocolate muffin texture or chocolate cookie texture.

Don’t get me wrong…I do love me some chocolate muffins and cookies, but there is just something about the texture and richness of a brownie that really satisfies the deepest of all chocolate cravings. And this…this is all brownie minus the crazy calories and fat that usually come as a packaged deal. I warn you though….these are powerfully addicting. A couple here, a few there…just one or two more on my way out the door….chocolate doesn’t last long around me.  But hey, if nothing else, do what I do. Remind yourself that black beans are a fantastic source of fiber, protein, folic acid, magnesium, iron…the list goes on and on. So really, it would be WRONG not to have brownies for lunch…am I right?

Fudgy Black Bean Brownie Bites

  • Yield: 10 servings (3 brownie bites)
  • Prep Time: 15 minutes
  • Cook Time: 12 minutes

Ingredients

  • 14 ounce can black beans (drained and rinsed)
  • 9 tablespoons unsweetened cocoa powder
  • 1/4 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup granulated sugar
  • 1 egg
  • 4 ounce unsweetened applesauce (I used one of those lunch box/snack size ones)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven 350

  2. Puree the (rinsed and drained) black beans in the food processor until very smooth. You really don't want any lumps or whole beans hiding in the batter.

  3. Add the cocoa, flour, baking soda, and salt and blend well.

  4. Add in the sugar, egg, applesauce, and vanilla and blend again until smooth.

  5. Pour into a greased mini muffin pan. You could use a regular muffin pan or even a small baking dish but remember that the baking time will change. I got 31 brownie bites out of this batter

  6. Bake at 350 for appx 12 minutes. Every oven is a bit different so keep an eye on them. When your brownies begin to slightly pull away from the side of the pan, have a slightly rounded top that doesn't remain dented when you touch it... then they are done.
