White Chocolate Cranberry Orange Cookie

I am in full fledge Christmas mode right now. Lights are up, shout out to my hubby for that, only minimal frostbite involved;) Christmas tree trimmed and decorated. Yay for new decorations and a ridiculously priced tree skirt….what is up with the prices of tree skirts?!?! Totally worth it though, I’m going with a cream and gold look and I LOVE it. I think my favorite thing among all my shiny and new decorations are the little homemade decorations sprinkled in. With a 5 and 3 year old, I know that we have only just begun in that department and I am SO excited!!!

The cookies though, you came here for cookies and I promise that these won’t disappoint. Oh my goodness have I got a cookie recipe for you. Soft and chewy, with the essence of warm vanilla and bright orange interrupted only by the slight tart cranberry and creamy white chocolate… this Christmas cookie has it all, PLUS the added bonus of whole grains! White Chocolate Cranberry Orange Cookie

  • Yield: 16 cookies
  • Prep Time: 20 minutes
  • Cook Time: 8 minutes

Ingredients

  • 3/4 cup white whole wheat flour
  • 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup salted butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • juice of 1 orange
  • zest of 1 1/2 orange
  • 1/2 cup white chocolate chips
  • 1/4 cup sweetened dried cranberries

Instructions

  1. Preheat oven to 350

  2. In a small bowl, combine the flours, baking soda and salt and set aside.

  3.  In a medium sized mixing bowl, cream the butter and sugar before adding the egg, vanilla, orange juice and zest and beat well. (To zest my oranges, I used my cheese grater and scraped the orange along the side with the smallest holes.)

  4. Stir in the white chocolate chips.

  5.  Drop by rounded tablespoons onto a greased cookie sheet. Using appx 11/2 tablespoons of dough per cookie gave me 16 cookies.

  6.  Place 4 dried cranberry pieces on each cookie, arranged like a flower with 1 white chocolate chip in the center.

  7. Bake at 350 for appx 8 min. Every oven is different so really keep an eye on them around the 7 minute mark. You want them to look slightly underdone since they will finish baking as they cool.
