If you are in need of a fudgy brownie fix but don't want all the extra fat and insane amount of calories that accompany said fix.... You are in luck! I made these chocolatey bites of heaven the other day out of black beans and bananas. No flour, no butter and only 1/2 cup of sugar and I'm telling you..... They are awesome! You absolutely will not find a better brownie that's under 150 calories that tastes this great.

Incredibly flavorful yet mild enough for the whole family, this lean hotdog chili is made with simple healthy ingredients.
I don't know about you, but evenings in this house tend to get rather hectic. Between orchestrating toy clean up, baths and showers for the two older ones, and calming my 2 month old who without fail still gets extremely fussy between 5-7pm every evening, dinner time just sneaks up on me. I confess, over the summer my kiddos have eaten their fair share of nuggets and Kraft ;) The thing is, I really WANT to cook up a healthy family dinner but I either need it to be ridiculously simple with minimal prep work OR I need to able to throw it all in the crock pot earlier in the afternoon. So I did a mixture of both.

My husband is SUCH fan of these breakfast potatoes. BONUS: You can literally make them in 15 minutes, one handed, while you juggle a baby on your hip. :P I know because that is exactly how these were made!! The trick to quickening the cooking process is microwaving the potatoes beforehand. Once you do that, it's just a matter of throwing them on a hot skillet with your favorite spices and bam... Done and done. Jeff and I LOVE these potatoes paired with over-easy eggs and turkey sausage for a truly hearty and healthy meal, but you could also throw some bacon, red onion, and scramble some eggs in for an easy one pan meal. This recipe is extremely forgiving, so feel free to get creative with the spices and add ins. What are some of your favorite variations?

Banana Berry Breakfast Cookies

I whipped up these simple and nutritious cookies on a rainy afternoon and they went so fast, I kinda wish I'd made a double batch! The good thing is, they really are very quick to throw together. No beaters. No chilling. Just mix it by hand and throw in the oven. 10 minutes later, your kitchen will be filled with the sweet smell of banana, cinnamon, and brown sugar. Hmmmm, Perfect! Right out of the oven, these bites of heaven were super soft and almost reminded me of a hearty muffin top. My 4 year old even loved them (after he picked out the offending dried blueberries) If you're not a fan of dried cherries and blueberries or can't find them, feel free to substitute cranberries, raisins, or dates. This recipe is very flexible.

If you have any leftovers or thought ahead and made a double batch, I would highly suggest storing them in little freezer snack bags. I personally LOVE frozen breakfast cookies with my first cup of coffee in the morning (of course that might just be a weird thing of mine) but if you are in a rush out the door, you could easily throw a bag in your purse for a healthy and filling pick me up later in the day. I think the banana berry combo is my favorite. What's yours?

Ingredients
  • 1 1/2 cups quick oats (not instant)
  • 3/4 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1 over-ripened banana (mashed)
  • 3 tablespoon unsweetened applesauce
  • 2 tablespoons butter (melted)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar (packed)
  • 1/2 cup dried cherries and berries*
* raisins, craisins, or dried dates would work well too
Directions
  1. Preheat oven to 350
  2. In a small bowl, combine oats, flour, baking soda, and cinnamon.
  3. In a medium mixing bowl, whisk together mashed banana, applesauce, butter, and sugar.
  4. Stir in flour mixture until completely combined.
  5. Stir in dried cherries and berries.
  6. Using 2 tablespoons of dough, place on lined baking sheets.
  7. Bake for 10 minutes or until lightly browned on the bottom.

Easy Applesauce Muffins

Incredibly simple and made with very basic ingredients, these low fat, whole grain muffins are kept moist and sweet with the goodness of applesauce.

I don't know about you, but sometimes I just want a very simple, basic muffin for breakfast. Nothing super fancy, no explosion of blueberries or chocolate, just a subtly sweet, healthy muffin to drizzle with honey or strawberry preserves and enjoy with a hot cup of tea. Now THAT, is breakfast perfection and is exactly what I have here today.

 With only 1/2 cup of sugar and 1 tablespoon of oil in the entire batch, these muffins are kept sweet and moist with 1 1/2 cups of unsweetened applesauce. When I crunched numbers, I was so please to find that they were only 130 calories piece! WIN!

This week, I have also officially reached the 30th week of my pregnancy (yay!! I'm in the home stretch) but I have to admit, I've also reached new levels of exhaustion. I don't remember feeling this level of fatigue with my first two.... Of course I wasn't chasing around a very energetic 7 and 4 year old either! All that to say, I am ALL about easy and healthy meals that require basic ingredients and come together in 30 minutes or less. Also, it's ideal if minimal dishes are dirtied in the process......I'm not asking too much am I? I think not, because this gorgeous salad totally fits the bill.
